Anyone have a tried-and-true recipe for Gingerbread Men?? I realize they will need to be a certain stiffness to cut and decorate, but in the past the recipes I've tried have been hard as a rock. I would love a recipe for nice, soft, gingerbread cookies that are still firm enough to decorate. Thanks!

Gah, I google for this, and I get a lot of recipes that use coconut AND milk, but nothing that uses coconut milk.

My students have a horse show this weekend and unbeknownst to me instructors must bring something to sell at the bake sale. Because all the easy stuff was taken, I've been 'assigned' Rice Krispy Treats.
